Echizen Oroshi Soba/Japanese Cuisine & Ryotei
A long-established soba restaurant with a history of over 120 years, established in the Imadate district of Echizen City in the Meiji era.「Soba is a living thing」 says the fourth-generation owner, who serves thick, firm Nihachi soba. The flavorful broth made with plenty of kelp from Rishiri, Hokkaido, and the local spicy daikon radish are also excellent, with just the right amount of spiciness that does not interfere with the soba flavor. 「Tamago katsu-don」 (An egg cutlet served on top of rice in a bowl, tossed with a fluffy egg) is also popular.
Most customers order a set of oroshi soba and tamago katsu-don (egg cutlet rice bowl).
