Using homemade noodles prepared fresh every morning and broth made with local spring water called Oshimizu, we have continued to serve the same time-honored flavor passed down through generations. The “Age Tsukimi Don,” made with carefully selected local fried tofu, features juicy tofu perfectly paired with an egg—offering a uniquely Fukui flavor, fitting for a region known for having the highest consumption of fried tofu in Japan. “Volga Rice” features nostalgic ketchup-flavored rice, perfectly complemented by a rich and tangy sauce. The “Oroshi Soba” is topped with fragrant bonito flakes, shaved by the owner himself from whole dried bonito, adding a rich aroma to the dish.
