The Big 3 Gourmet of Echizen/越前おろしそば
The soba, prepared fresh every morning, is an ultra-thin “nihachi” soba (80% buckwheat, 20% wheat flour)—rare in Echizen City—and is characterized by its smooth texture and ease of eating, even for small children. With the "Oroshi Soba Tasting Set," you can enjoy a side-by-side comparison of two types of oroshi soba—the traditional bukkake style and the dipping style—while savoring the differences between the two kinds of dashi. The “Tori-ten Soba,” topped with lightly fried chicken tempura specially prepared to complement the soba, is a unique dish created by the proprietress from Ōita—and can only be enjoyed here. Every menu item comes with homemade *sobagaki, offering a nostalgic, traditional flavor, and sobayu (hot soba water). *sobagaki=A dumpling-like dish made by adding hot water to buckwheat flour and kneading it thoroughly.
