This pâtisserie is run by Tetsuya Tsubakihara, an Echizen City–born owner-chef who is also a pâtissier and chocolatier.
Mr. Tsubakihara, who has won the Fukui Prefectural Governor’s Award in a decoration contest, is highly regarded for his delicate technique, which shines in his cakes and chocolates. His chocolate-covered orange peel, “Orangette,” is especially popular and often sells out, making it a favorite among many repeat customers.
