The Big 3 Gourmet of Echizen/越前おろしそば
Founded in 1871, this long-established buckwheat noodle restaurant is celebrating its 150th year in business and has been in operation for four generations. We use only buckwheat flour produced in Fukui Prefecture and serve *Jyuwari Soba.
The restaurant has been using an iron pot in Takaoka City, Toyama Prefecture since its establishment. We recommend the simple grated buckwheat noodles, and in winter we also offer grated crab noodles.
In pursuit of dashi, we blend three types of soy sauce.
We also grow four types of daikon radishes in-house and use them in different ways to take advantage of their unique characteristics, such as the Aokubi Daikon and the Nerima Daikon.
