Our master soba craftsman, with 25 years of experience, presents customers with 100% buckwheat soba made exclusively from Fukui Prefecture–grown buckwheat, stone-milled into extra-coarse and coarse grinds, and prepared as juwari soba. This is a highly valued juwari soba, crafted with uncompromising dedication, using buckwheat flour from Fukui Prefecture even for the dusting flour. The soba dipping sauce is carefully prepared by simmering a broth made from three to four varieties of blended dried fish flakes for several hours, then enhancing it with fermented ingredients. The popular “Salt Soba,” available as part of a set menu, allows guests to compare four different types of salt, fully bringing out the aroma and natural umami of the soba. For soba enthusiasts, it is truly a moment of pure bliss. For parties of five or more, advance reservations are recommended.
