越前おろしそば

Munéchika, a specialty shop dedicated to delicious noodles. Established in 1947. “Munéchika Seimen,” a noodle maker that has been producing noodles for four generations, operates this directly managed specialty shop offering delicious noodles, including Echizen soba. From the “oroshi soba,” made by slowly milling Fukui Prefecture–grown buckwheat seeds in-house using a traditional stone mill, to the recommended “oroshi soba with Takeda deep-fried tofu,” which allows you to enjoy both soba noodles and Takeda’s deep-fried tofu in a single dish. The house-made dipping sauce pairs exceptionally well with the deep-fried tofu. Another highlight is the excellent location, where guests can enjoy their meal from the observation terrace while taking in sweeping natural scenery and views of the Hokuriku Shinkansen.
