The Big 3 Gourmet of Echizen/越前おろしそば
Many regular customers come from outside of the prefecture to enjoy the owner's special Jyuwari Soba. The menu offers only four types of juwari soba. *Some soba is made with buckwheat only. It is called Juwari soba.
The owner, who has studied soba for many years, arrived at his signature「oroshi-soba」 through trial and error. He mills his own carefully selected brown soba flour from Ono, Fukui Prefecture, and uses the ideal blend for oroshi-soba.
The flat noodles are made without using any binders or additives, and the original aroma, taste, and color of the soba noodles stand out.
There is also hot 「kakesoba」 (buckwheat noodle), 「Morisoba」 with rock salt, and 「tebiki soba」 (hand-ground buckwheat noodle), which is limited to 10 servings.
